β’2 packages button or baby bella mushrooms (approximately 4-6 cups)
β’1/2 red onion
β’3:1 ratio red vinegar to olive oil
β’Dried thyme
β’Onion powder
β’Garlic powder
β’Salt
β’Chili flakes
Method:
Wash or brush the dirt off the mushrooms. Slice them up (I usually do just in half). Boil in water for 30-60 minutes. After, plunge mushrooms into cold water. Strain. In a bowl, add in your spices (you can use however much you like - eyeball it! I like big flavor so I do a good amount of each), then top with red vinegar, and olive oil (3 parts vinegar to 1 part olive oil - they donβt need to be swimming in it, but mostly covered is good). Let sit in the fridge for at least an hour before serving. Will store in the fridge for a week, and the flavor gets better the longer everything melds together.
